April Recipe 2011: Gingersnap Crusted Pork Chops with an Orange Molasses Reduction:
Pre-heat oven to 375 degrees. You will need a large oven proof skillet. Start off with 4 center cut bone in pork chops. 6-8 gingersnaps (I used Kenna's Cookies) 3 tablespoons extra virgin olive oil kosher salt and fresh cracked pepper for seasoning of chops Orange&Molasses Reduction 1 cup orange juice(fresh if you can)about 2-3 large navel oranges 2 tablespoons molasses 1 tablespoon unsalted sweet butter Kosher salt Fresh cracked pepper Salt and pepper the pork chops(both sides.) Crush the gingersnaps in a large Ziploc bag with a heavy rolling pin, or use a food processor if you have one. They need to be ground(like graham cracker crumbs.) Heat the oil in your skillet on top of stove, med-high heat(let it come to a slight ripple before you add the chops, it needs to be hot(sizzle) so the chops will sear and brown nicely) add the seasoned pork chops. Two minutes on each side is good. When you are on the second side, pat each chop liberally with the gingersnap crumbs. Remove pan from heat and place in pre-heated 375 oven. Remember your pan must be oven safe. Bake for approx. 10-12 minutes. I like my pork medium, so my internal temp for my chops is approx. 140 degrees, it will still have a little carry over cooking time while resting out of the oven, and come up to 150 degrees. You decide for yourself how you like your pork and what temp. is good for you. :) Remove chops from pan and let rest on platter. Place the pan back on top of stove(it will have all those wonderful chop drippings that you will want to use for the sauce) and put on medium heat. Add your molasses and orange juice. With a wooden spoon, scrape all the bits off the bottom of the skillet and let the sauce come to a gentle boil. Let sauce reduce for about 2-3 minutes at a gentle simmer, add a pinch of kosher salt and fresh cracked pepper, then add your butter to finish it off for a rich silky smooth sauce. Serve gingersnap crusted pork chops along with the orange and molasses reduction, and enjoy. Roasted sweet potatoes are a great side for this dish. About 30 minutes before you start the chops, wash, dry and wrap in foil 3 large sweet potatoes. Place in the 375 degree oven. By the time your pork chops are done, the sweet potatoes will be also.
